Rich & Chocolatey Granola Bars

One of my favorite snacks to grab while I'm getting ready to leave the house, about to sit down and feed the baby, or even to eat just because, is a granola bar. Little Mister and I eat them up like crazy, but I always have such a hard time buying them. Not only is a box of granola bars a little on the pricey side, but they're packed full of ingredients that I can't read the name of. Shouldn't a granola bar be simple? Yep, and that's why I decided to try my hand at making them and we loved them so much, I couldn't wait to share the recipe with you!



There is no reason for a granola bar to be packed full of crazy ingredients and additives, when with just 7 simple ingredients I was able to make my own. They last up to 2 weeks in the refrigerator (HA! if they last that long) and taste oh so delicious whether you eat them cold, or at room temperature. I adapted the base of the recipe from Reasons to Skip the Housework's Breakfast Bars, but since an actual granola bar was what I was craving, I played around with the recipe until I got what I wanted. And what I wanted was delicious, rich, chocolatey granola bars. Mission accomplished.

The best part of these granola bars is that there is ZERO BAKING REQUIRED! Oh, and the fact that they only take about 5 minutes to make. Whoop Whoop! So lets get to it!

What You Need:

1/4 cup Honey
1/4 cup Dark Brown Sugar
4 Tablespoons Butter
Splash of Vanilla Extract
2 cups Old Fashioned Oats
1 cup Rice Krispie Cereal
1 cup Semi Sweet Chocolate Chips

Baking Sheet or 8X8 Pan
Parchment Paper


What You Need To Do:

Place your honey, brown sugar, and butter into a microwave safe bowl and microwave for one minute. Use caution! Bowl will be hot and the mixture may bubble!

While you're waiting, line your baking sheet or pan with parchment paper.

Remove the bowl and stir. Place back into the microwave and heat for an additional minute. Use caution! Bowl will be hot and the mixture may bubble!

Remove the bowl and stir. Add a splash of vanilla to the mixture, use caution because the mixture will likely bubble up when the vanilla is added. 

Seriously, did I say use caution enough? Because it HURTS if it bubbles onto you. Trust me, no fun.

Add your oats and stir until the oats are evenly covered in the honey mixture. Then stir in your Rice Krispies until they are mixed in. Last, add your chocolate chips. It's okay if they melt so don't freak out if/when they do! 

Spoon the granola mixture into the parchment lined pan and "squish" it down until it is even in the pan. You will cut it when it's set so be sure that your granola is even across the pan. Place it in the refrigerator for one and a half to two hours to set, and cut into bars! Store in an air tight container in the refrigerator for up to two weeks. Eat cold or room temperature, and enjoy!
