All of the wonderful men in our lives, from the New Daddy, to the Uncle, to the Great-Great Grandfather. They are all deserving of a day to celebrate for all that they do for us!

A favorite around here is Blue Moon. It is the go-to beer for all celebrations or even one of those long hard weeks at work.

This Father's Day we are Celebrating with some Blue Moon Cupcakes with Orange Buttercream Frosting. Good News is: They've already been Daddy and Grandpa approved! My Husband and Grandfather devoured them right after photos were taken ;)
What's even better, is that are very simple and easy to make.
Note: If you want a heavier beer flavor, please feel free to use a darker beer. I used a light beer, they are my Hubby's favorite and I used what we had on hand!
For the Cupcakes:
1 Box of White, Yellow, or Vanilla Cake Mix.
1 Cup of Blue Moon Beer
1/2 of Canola Oil (Or switch for applesauce)
3 Eggs
Basically, the directions are the same as stated on the box. Ingredients are the same as the box of cake mix, but you add in the beer instead of the water.
Turn on your oven to 350 degrees, so it is set to bake and line your cupcake pan with liners. Mix all ingredients together in a large bowl; I simply whisked the cake mix to save time cleaning and use my hand mixer for the frosting. The batter will be very fluffy because of the beer. Fill up the liners a little over halfway with the cake batter. (I would suggest only filling them halfway, since they are fluffy they do rise a great deal!) You can fill about two cupcake pans with this mix.
Put them in the oven for 15 minutes or until they are a little golden on the top and edges, and of course the toothpick comes out clean.
While the cupcakes cool.. You can start on the Frosting!
For the Frosting:
1 Stick of Butter
4-5 Cups of Confectioners Sugar (Powdered Sugar)
Juice of one Orange
Cream your butter in a medium sized bowl, with your hand mixer. Add in the Confectioners Sugar and Orange Juice, blend at low speed until its just mixed in and then on a high speed for about 3 minutes. So its nice an fluffy!

ReplyDeleteInteresting idea! I will have to try this. Only thing is I don't like using box cakes - but I don't see why I couldn't just add some beer to a "from scratch" recipe. Will be fun to try sometime! I wonder if these would have to be kept away from kiddos? I probably would - just to be safe.
ReplyDeleteMy husband LOVES blue moon beer! For his 30th birthday I made a 3 tier blue moon "cake" from blue moon bottles. I'm sure he'd love these cupcakes!
