Homemade Healthy Meatballs {The Almost Clean Eating Meatballs!}

Over the last couple of weeks (okay maybe more like a week), Mr. Hunky and I have been doing our best to practice 'clean eating' as much as possible. At first, I was nervous - but it's really a lot easier than I imagined.

A couple of nights ago I was brainstorming what I could make for dinner and nothing sounded good. I was frustrated and all we had in our freezer in terms of meat was ground beef and chicken. Both of which I am terribly sick of. After I decided that I would be cooking with ground beef instead of chicken, I scoured Pinterest for some inspiration and came across several meatball recipes. After reading through more than my fair share of recipes I decided to just use my best judgement on the ingredients to include - especially since I was doing my best to keep this recipe as clean as possible.

Now here's a disclaimer. If you are practicing clean eating - this recipe is not entirely clean! So use your best judgement :)

With the warm weather quickly approaching, older children getting out of school for the summer, and time off accumulated at work, there's never been a better time to hit the open road with your family and get out of town for a bit! The idea of planning a road trip can sound like a family bonding experience worth having, but once the trip is planned and the set off date has arrived, road trips can be the most terrifyingly stressful thing of your life. Especially when there is a toddler involved!

As many of you may know, Mr. Hunky and I recently tied the knot (April 5th, 2014!) and we had an absolutely amazing wedding, but before we could get married and share our special day with our families, we had to get there. There being California. Northern California. All the way from Southern Arizona! No big deal right? Not if you intend on flying! But oh no, we couldn't make our lives that simple because we were crazy and wanted to bring our two dogs with us! So there we were, ready to hit the open road with two large dogs, a two year old, and approximately 17 hours on the road each way. Let the good times roll!

When it comes to buying clothes for Little Mister, one of my favorite places to shop has 
always been Kohls. I've always felt like I get the most "bang for my buck" when I shop there and honestly, the clothes are just to cute not to buy! One clothing line of Kohls that I have always loved is the Jumping Beans and now that they have teamed with Disney, I love it even more! 

Little Mister is a huge fan of Disney and one of his favorite movies is Planes. When Planes hit theaters I took him to see it and he was completely mesmerized! When I heard that they were making a sequel - Planes Fire & Rescue (coming to theaters July 18th) I knew he would be so excited to see the movie, and I can't wait for it to come out so that we can enjoy it together!

MCO's Taco Disks {Copycat Taco Bell Crunchwrap Recipe}

I really try to consider myself to be a healthy eater and although we do sometimes find ourselves 'cheating', I am proud to say that I rarely eat fast food. In fact, up until this pregnancy I can't tell you the last time I actually ate fast food (aside from In N Out burger, but I totally don't count that as fast food!). Baby #2 has had me craving all kinds of fast food from McDonald's to Taco Bell. Although I try hard to fight the cravings, I broke down not to long ago and hit the Taco Bell drive through for an old high school favorite - the Crunchwrap Supreme.

Being that this splurge was several weeks ago and I got the craving out of my system, I hadn't thought about eating another Crunchwrap until yesterday after I came across an Instagram photo that stirred up all kinds of hunger in my belly. My friend Jessica (you may remember her post on Baked Pumpkin Seeds last October) had been inspired by Pinterest into making her own Crunchwrap and when I saw it, I immediately asked for the recipe. Unfortunately the pin she came across had linked to spam, so with her permission I tweaked the recipe that she came up with and created a variation of my own!
