Today, I am feeling lazy. I haven't felt well the last couple of days so I've pretty much just been lounging. Poor Mrs. Bow Jangles is so bored! I must take her on a walk today. When I have lazy days the last thing I want to do is take the time to cook a meal however I've been wanting to maintain my healthy eating and I refuse to eat fast food SO I decided to make some crock pot chicken noodle soup. I love love love using my crock pot! What isn't yummy that comes out of a crock pot?
Here's what you do!
Chop carrots, celery, onions, and garlic. (amount to preference). Put three cans of chicken broth and one can of beef broth into the crock pot then add the veggies. Take a large chicken breast and put it into the crockpot. Add salt, pepper and garlic powder to taste. Cook on high for 4 1/2 hours. Remove the chicken and with a fork shred it up and return it back to the crock pot. Add noodles of choice- egg noodles are probably the way to go but I'm going to be using large shells because that's what we had on hand. Cook for another hour or until the noodles are ready to go! Serve with French bread or crackers!
This recipe is so yummy, it's perfect for lazy days, cold days, sick days or just any day!!!
Love my crock pots! I got so two so that I can do veg meals in one while my husbands stuff is cooking in the other. So easy and good!!
ReplyDeleteI don't do fast food either! Sometimes if I'm driving for a long time I don't have much choice but I cook so much that I never need to.
I have two also! A big one that I keep out on the counter and a little one that I keep in the cabinet. The little one is more for dips or desserts and doesn't get used much. I really need to use my crock pots more.
DeleteThe only fast food I'll do is In n Out. I have a major love for in n out but luckily the closest one from me now is 45 minutes away so I can't be tempted. I'm far to lazy to drive that far for a burger. I attempted to get in touch with my high school self and had nachos from taco bell recently- should have known better...I was sicker than a dog after. I'll stick to healthy! :)
You should totally post a crock pot dessert recipe for me! I've never done one!!

DeleteI've been playing with my chicken soup lately. 1 day dumplings another day I pan roasted everything before it went into the soup (Tasted almost like a turkey dinner that way) and home made noodles in the crock pot-- but I really should have cooked the noodles separately and added the cooked noodles to the soup when served-- that way they would have kept a nice texture. They all became swollen and mushy. I love that it is a quick hearty healthy meal that always tastes like it was such hard work. YUM!
ReplyDeleteI haven't made chicken noodle soup in a crockpot. It is that time of year for soups and this one looks great. I have already made potato soup and chili, so it is time for some homemade chicken noodle soup.
