Confession: I am not a morning person.
I hate the feeling of opening your eyes to early in the morning, getting up, having to get ready, make breakfast, eat, and get on the with the day. Why can't I just stay in bed until I feel like getting up!?
Oh yeah. I'm a mom!
One thing that I do love about the mornings though, is breakfast. I really love breakfast foods and as much as I hate actually making breakfast, I do enjoy eating it.

One of my "staple" breakfasts has become my homemade bread pudding. It's quick, easy, and delicious. Now I should clarify, when I say that it's quick I do mean that it's quick in prep time. This recipe does take about 45-60 minutes in the oven so I recommend it more of a weekend breakfast food than a weekday breakfast food, especially if you are a working parent on a time crunch!
What You Need:
6-8 Pieces of Bread (We use Country Potato)
2 Tablespoons of Butter, melted
4 "mini boxes" of Raisins
2 Cups of Milk
4 Eggs
3/4 Cup Granulated Sugar
3 Shakes of Cinnamon, plus more on reserve
2 teaspoons of Vanilla
What You Need To Do:
Preheat your oven to 350 degrees then begin cutting your bread into medium sized chunks. Transfer bread into a small baking dish (we use Corningware).
Combine melted butter, egg, sugar, cinnamon, milk, raisins, and vanilla in a mixing bowl and stir until thoroughly mixed. Pour the mixture on top of the bread and let it sit for about 3-5 minutes.
Coat the top of your uncooked bread pudding with cinnamon and cover with an appropriate lid or tin foil.
Place in the oven and bake for 45 minutes. Once your timer sounds, take your bread pudding out of the oven and cut into it. If there is still a significant amount of liquid, place your bread pudding back in the oven for an additional 15 minutes.
When your bread pudding is finished, remove it from the oven and allow it to sit for an additional 5 minutes or so before serving.
Top your bread pudding with maple syrup, fresh berries, powdered sugar, or whatever else sounds delicious, and enjoy!

This is an easy recipe which both sounds and looks delicious. I like the idea of country potato rather than wheat for the bread.
