Little Mister is one of the pickiest eaters I have ever had the pleasure of knowing. There are days where I am literally drove to my wits end trying to figure out what he will eat, and how to successfully get something nutritious down him. Some days I win the battle, but most days I lose miserably.

Little Mister loves a good snack, so one thing that has always been helpful for me is foods that come in snack form, yet are still packed full of nutrients and are healthy for my little guy. When it came time to think about how I wanted Little Boy's nursery to look, my brain was a scattered mess of ideas and thoughts. Little Mister never really had a nursery; when we brought him home we lived in a one bedroom townhouse, and shortly after that him and I moved in with my grandparents while daddy went off to a long job training course in another state. By the time we were reunited as a family and moved into our home in Arizona, Little Mister was nearing a year old and my thoughts of putting together a nursery were long gone. Mexican Inspired Lettuce Wraps

As many of you may have noticed from previous recipes, Mr. Hunky and I are trying our hardest to eat clean and cut out all (well, as many as possible) processed foods. It's a lot easier than I thought it would be, but goodness how I crave the occasional bag of chips...especially being pregnant!

After making my Clean Eating Asian Inspired Lettuce Wraps the other night, I was thrilled with how easy and filling they were and really wanted to come up with a similar recipe to have as an alternate.

Clean Eating {Asian Inspired} Lettuce Wraps

Since we started our adventure with clean eating (or *semi* clean eating as I'm calling it), I've been trying to think of recipes to make that are delicious and considered clean. I'm not the most adventurous chef but I think I've been doing pretty good! Mr. Hunky has seemed impressed and the meals have tasted really good, so I'm not ashamed to pat myself on the back.

One type of food that I have always loved is Chinese food, but Mr. Hunky has never been a fan. The first and last time we ate it together was this past Mother's Day when his new (pregnant) wife batted her eye lashes and after I promised myself it would be the last time unless we found a real high quality Chinese restaurant to dine at - the one we ate was pretty gross. 

I still get cravings for Chinese though, so I've started making my own at home and both Mr. Hunky and I love it. I've dappled in making sweet and sour chicken, fried rice, and now this tasty Asian Inspired Lettuce Wraps!
